Celeriac and apple salad

 

Ingredients:

½ medium size or 1 small celeriac

1 red apple

1 tsp light olive oil

½ tsp salt

4-5 fresh mint leaves

juice from ½ lemon

zest from 1 lime

 

Preparation:

Cut and peel the skin from celeriac. In a medium size glass bowl grate celeriac and apple (skin on). Add the lemon juice immediately to prevent browning.  Cut mint in thin strips, zest lime and add along the rest of ingredients. Adjust taste and chill.  Decorate with mint leaves.

 

Serving suggestions: appetizer, snack, and side dish.

 

Yields: 2 servings
